    hello

    im poor gf has been working her ass off over last few weeks. and she finally has 2 days in a row off.

    so i wanna cook something nice for a meal.....now.....

    who has tried goose? i have not but fancy giving it a go.

    is it fatty? chicken like? ok im a nooob at this lol

    HELP!!

    It's like a duck, fatty but has a gamey taste like pheasant. Serve with something citrus to cut through the fattiness.

    prick all over and roast upside down on a wire tray over the roasting tin.
    upside down keeps the breast moist.
    nice bread sauce and apple or gooseberry sauce
    potatoes in the dripping underneath while cooking are to die for
    french beans and caramelised carrots
    lemon and lime sorbet for pud

    do that and you've scored

    Goose is like duck only with a more game like taste. It is very greasy and like duck you need to be able to drain the fat out of it (on the plus side, the fat does make great roasties) by slashing the skin in places and standing it off of the tray. Altermatively you could make a marinade containing cider or white wine vinegar which would cut into the fat and break it up. The biggest issues with goose is the amount of meat for the size of bird. You need a large bird to get any reasonable amount of meat.

    Duck or Phesent make better alternatives in my opinion.
