I would have a look at the clutch springs. These will set with time and loose effect. Lovely old barge the CX, just change the oil every 1000 miles and you'll never get any issues.
You can fit a brake light then tape over it for the Mot. In terms of speedo, Gps bike computers are cheap enough and accurate enough.

I would recommend a 70's or early 80s bike with a steel frame an old fashioned engine.

Super unleaded is still nil ethanol. 95Ron is up to 10% now. Have seen it rot a fuel pipe, but never that bad!!
Pure Silk gloves are the best thermal inner gloves. Don't need to be motorcycle specific, just pure silk. Also make sure your winter gloves are not too tight or they will conduct heat away.
Good quality heavy duty chain tool will break the rivets.
